Marissa has been working with emerging brands to build innovative products, technology, and services for over ten years since she led nutrition initiatives at The White House. Most recently, Marissa was the Director of The University of Texas Nutrition Institute, whose mission is to connect nutrition science to food and health. She worked with scientists and entrepreneurs to commercialize and grow early stage concepts in food & beverage, restaurant, and CPG. She led the development of nutrition education experiences to empower hundreds of consumers, healthcare professionals, and entrepreneurs with scientific guidance for a better life. She teaches courses on nutrition innovation, food and beverage, and CPG entrepreneurship at McCombs Business School.

Yoni Medhin
Grain4Grain, Co-Founder

Yoni is co-founder of Grain4Grain, a San Antonio-based FoodTech startup. In 2018, they developed a patent pending process that allows them to dry and mill alcohol byproducts ranging from breweries and whisky makers -- all the way to agave and sotol from tequila makers. Their products are Upcycle Certified, and they have a partnership with H-E-B for a new product line in their bakery department. Grain4Grain also sells pancake and waffle mix, and barley spent grain flour at SA-are H-E-B stores.

Maria grew up in Colombia and moved to Texas more than 10 years ago to work in the Oil & Gas industry. Through Colibri Mountain Coffee, Maria is able to express her love for her country and share its natural beauty while making a sustainable impact in both Colombia and America. She is currently participating in the Naturally Austin M/O Track.
